A country kitchen comfort food
Ingredients:
1 kg chicken pieces or 1 chicken, cut up into legs, thighs wings and breasts, skinned and de-fatted
2 cups water
1 tsp salt
1 carrot, diced
1 onion, diced
1 branch celery, diced
1 tsp of any fresh herb
1/2 cup milk
1/4 cup flour
dumplings
1/2 cup milk
1 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/8 cup shortening
Directions:
1. 1. Bring Chicken, salt, veggies and herbs to a boil and simmer 1 hour or until chicken is fully cooked.
2. 2. Strain broth and reserve chicken, discard veggies
3. 3. Mix milk and flour together until smooth.
4. 4. Whisk into boiling broth and simmer to thicken.
5. 5. Return chicken to pot and return to simmer.
6. Dumplings
7. 1. Mix dry ingredients together.
8. 2. Cut shortening into dry goods until well mixed.
9. 3. Add milk and mix just until moistened.
10. 4. Drop spoonfuls into slowly simmering stew.
11. 5. Cook uncovered 10 minutes then covered 10 minutes.
