Chicken and Dumplings

Sooo good, chicken stew with lots of veggies and dumplings on top.
Ingredients:
8 cups chicken broth
1/2 large zucchini
1/2 large onion
1 tbs garlic
1 chicken breast
2 cups bisquick
2/3 cup milk, lowfat, fluid, 1% milkfat
1 large carrot
2 celery stalks
1 1/2 tbs olive oil
Directions:
1. Chop chicken into small chucks
2. In a soup pot heat olive oil, then add chicken, onion, garlic, salt and paper, diced zucchini, carrot, and celery.
3. Let cook until chicken is completely cooked.
4. Add chicken broth.
5. Bring to a boil and let cook a minimum of one hour.
6. In a bowl stir together bisquick and milk
7. Drop dumpling by the spoon full into soup. Reduce heat.
8. Let cook 10 minutes uncovered, then 10 minutes covered.
9. Makes 4 LARGE servings
