A clementine salad with a slight Asian influence. Chicken and oranges are meant to be together. Clementines are a seasonal fruit coming available in November so now is a great time to enjoy them.
Ingredients:
6 ounce half of a 6-ounce bag mixed baby salad greens
2 clementine oranges, peeled and separated into individual segments
1 6- or 8-ounce package cooked grilled chicken breast strips or 1-1/2 cups cooked chicken breast strips
1/2 cup chow mein noodles
1 tablespoon orange marmalade
3 tablespoon orange juice
1 tablespoon canola oil
1 tablespoon white wine vinegar
1/2 teaspoon hot chinese mustard or dijon-style mustard
1 tablespoon minced scallions
1/4 teaspoon salt
1/8 teaspoon pepper
Directions:
1. 1. Combine salad greens, orange segments, chicken and chow mein noodles in large salad bowl. Toss gently but well.
2. 2. Combine orange marmalade, orange juice, canola oil, vinegar, mustard, scallions, salt and pepper in a small bowl. Stir well to mix. Pour over salad just before serving; toss gently but well.
