Chicken and Broccoli Stir Fry

I found this recipe on the web several years ago when my youngest was dieting and needing to eat more poultry but hates chicken. This dish she liked. It is rather quick to throw together and served alone or over rice makes for a tasty meal
Ingredients:
2 -3 boneless chicken breasts
1/2 cup pace picante sauce
2 1/2 tablespoons soy sauce
1 tablespoon water
2 -3 boneless skinless chicken breasts
1/2 cup picante sauce
2 1/2 tablespoons soy sauce
1 tablespoon cornstarch
1/2 teaspoon sugar or 1/2 teaspoon sugar substitute
3 tablespoons vegetable oil
1 medium onion, cut into wedges
2 garlic cloves, minced
1 tablespoon fresh ginger (i used 1 tsp ground and it was good)
2 cups broccoli florets
1 bell pepper, any color, chopped
Directions:
1. Cut chicken into 1/2 - 1 cubes.
2. Combine picante sauce, soy sauce, water, cornstarch, and sugar or sugar substitute in small bowl; set aside.
3. Heat 2 Tbls oil (or spray non-stick pan with cooking spray) in large skillet on med high heat.
4. Add chicken and stir-fry 5-6 minutes or until cooked.
5. Add remaining oil(optional),onion, garlic, ginger, broccoli, peppers.
6. Stir-fry 3 minutes or until vegetables are crisp-tender.
7. Add picante sauce mixture; stir-fry about 1 minute or until sauce thickens. * Any bottled picante sauce can be used, or if you have a recipe you can use your own.
8. Can serve alone or over cooked rice. (I prefer the rice).
