Chicken and Bok Choy Stir-Fry

Ingredients:
1 cup scallions, chopped
2 tablespoons ginger, minced
16 oz chicken breast, cooked (4 halves)
1/2 cup sliced fresh shiitake mushrooms
4 cups bok choy, chopped
2 tablespoons soy sauce
1 tablespoon vinegar, rice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
Directions:
1. Stir fry scallions in a wok or saute pan for 2 minutes and add ginger. Continue to stir fry for another minute and add chicken stirring constantly.
2. After about 2-3 minutes add shiitake mushrooms and bok choy. Continue to stir fry for another 3-4 minutes and add soy sauce, rice vinegar, salt and pepper.
