Chicken and Bacon Roll-Ups With Blue Cheese

This recipe is loosley based on a recipe from Cooking Light. Substitute chopped fresh basil or chives for tarragon or use flavored wraps, For easy preparation use a rotisserie chicken breast
Ingredients:
1/2 cup mayonnaise
1 teaspoon tarragon, minced
2 teaspoons lemon juice
4 whole wheat tortillas (or whole wheat flat bread)
2 cups romaine lettuce, shredded
2 medium tomatoes, chopped
4 bacon, cooked and drained
2 cups chicken breasts, cooked and sliced
4 tablespoons blue cheese, crumbled (optional)
2 tablespoons craisins (optional)
Directions:
1. Combine reduced-fat mayonnaise, minced tarragon, and fresh lemon juice in a small bowl. Spread 2 tablespoons mayonnaise mixture over each flatbread.
2. Top each with 1/2 cup shredded romaine lettuce, 1/2 cup chopped tomato, 1 bacon slice, crumbled, and 1/2 cup chicken, some blue cheese crumbled and the craisins.
