Chicken Ala King Supreme

Another one of those “comfort foods” so many of us seem to be into during this ridiculously cold winter! This is just good old stick-to-your-ribs, warm, comforting ala king, made easy with rotisserie chicken and whatever else you want to add - the yolk adds a nice richness to the sauce.
Ingredients:
2 tablespoons butter
6 mushrooms, sliced
1/4 cup onion, diced
2 tablespoons flour
1 cup whole milk or half-and-half
1/4 cup baby peas
1/4 cup frozen corn kernels
any other veggies you prefer
1/2 teaspoon salt
couple shakes of poultry seasoning
pepper to taste
1 cup diced cooked chicken (i use rotisserie chicken)
1 egg yolk
Directions:
1. In a 10” skillet, melt butter over medium heat; sauté mushrooms and onions until onions are opaque and mushrooms have given off all of their moisture and are nicely browned.
2. Sprinkle flour over sautéed veggies and stir to coat well.
3. Slowly pour milk into pan, stirring constantly to get a good mix with the flour.
4. Bring mixture just to a simmer.
5. Add peas and corn, and any other veggies you may like in the sauce, seasonings and chicken; bring sauce just to a simmer again.
6. Crack egg and separate yolk into a small cup; mix in about 1/2 cup of sauce mixture to the yolk to temper it before adding it to the sauce.
7. Heat thoroughly and serve over warm High As A Kite Biscuits or your own favorite biscuit or buttered toast.
