Chicked Cacciatore - Dairy Free

Reheats very well, serve over cooked spaghetti
Ingredients:
1 medium onion, peeled and chopped
1 garlic clove, peeled and minced
1/4 cup olive oil
4 large mushrooms, chopped
4 lbs chicken, cut up
1 lb italian tomato, with juice
1 bay leaf
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 dash cayenne pepper
1/4 cup dry white wine
1/2 teaspoon salt
Directions:
1. Saute garlic and onion until just browning.
2. Add mushrooms, cook until limp.
3. Remove veggies from pan.
4. Brown chicken in same pan.
5. Return mushrooms, onion and garlic to pan.
6. Add the tomatoes, bay leaf, oregano, basil, cayenne, wine and salt, bring to a gentle simmer.
7. Cook covered for an hour, check from time to time adding more wine if needed.
8. Serve over cooked spaghetti.
