An interesting salad with an unusual flavour reminiscent of some mediterranean cuisines. Shown on lettuce with pineapple side for a filling vegetarian lunch
Ingredients:
dressing
1 tsp dry mint or several fresh minced
1/2 tsp garlic powder or use fresh to taste
1/4 tsp ground cinnamon
1/2 tsp salt
1/3 cup cider vinegar
1/4 cup favourite oil
veg
1 cup diced or sliced celery, i like to include top leaves
1/2 to 1 whole diced red bell pepper
8 oz can sliced water chestnuts drained
15 oz can of garbanzo beans (chick peas, ceci) drained, rinsed
1 cup thinly julienned red onion
1 large tomato diced
options
lettuce
tuna
grilled chicken
Directions:
1. Add all dressing ingredients together and whisk thoroughly
2. add all vegetables together in large bowl and pour dressing over
3. keeps well in fridge and tastes great if marinates for a few hours
4. place on bed of greens/lettuce or serve as a fresh side
5. add flaked tuna or grilled chicken for a heartier variation
