This is a simple salad for when you're looking for something a little different from the same old side salad.
Ingredients:
2 15 oz. cans chickpeas, drained and lightly rinsed
1/2 cup extra virgin olive oil
2 teaspoons coarse sea salt
1 teaspoon freshly ground black pepper
1/4 cup fresh squeezed lemon juice
2 cloves garlic finely minced
2 cups fresh spinach leaves, washed, dried, and minced
Directions:
1. Mix everything together in a bowl with a lid - preferably glass - and mix with a wooden spoon.
2. Refrigerate for at least an hour but the longer it marinates together the better it is.
3. Keep up to 5 days
