Chewy Gluten Free Banana Biscuits

This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original call for 1 C gluten free flour mix with a bit of chick pea flour thrown in. If you use my Gluten Free Flour Blend, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice tooth feel. :) I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great!
Ingredients:
1 cup gluten-free flour (see gluten free flour blend)
1/2 teaspoon xanthan gum or 1/2 teaspoon guar gum
1/2 cup tapioca flour
1 teaspoon baking soda
2 teaspoons baking powder
3 -4 tablespoons sugar
2 large bananas, mashed
water (optional) or milk, as needed to make it a dough consistency (optional)
Directions:
1. Combine together all the ingredients, except for the bananas, and mix well.
2. Then add in the ripe, well-mashed bananas and mix well.
3. Add a splash or two of water or milk if it doesn't combine well (too dry).
4. Drop onto a greased baking sheet and bake for 12 minutes or until golden brown.
