Chewy Ginger Cookies

Bring these cookies out and watch them disappear! Soft and chewy, with bits of real candied ginger throughout. Easy to make but so special!
Ingredients:
3/4 cup butter, softened (no marg!)
1 cup sugar
2 cups all purpose flour
1/4 cup dark molasses
1 egg
1/2 tsp ground cloves or allspice
1/2 tsp ground ginger
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 1/2 oz or 100 grams of crystallized ginger, chopped fine
(i use ginger people ginger, but also have used bulk store crystallized or candied ginger)
Directions:
1. Oven at 375F.
2. Combine softened butter, sugar, molasses and egg. Beat well.
3. Mix dry ingredients together well.
4. Add wet to dry. Mix well.
5. Add crystallized ginger.
6. Chill for 1 hour (or several hours, i have even chilled overnight!)
7. Form 1 inch balls, roll each in granulated sugar.
8. Place on greased cookie sheet, 2 inches apart.
9. Bake 8-10 minutes. Do not overbake!
10. Makes about 5 dozen cookies.
