Chewy Fruit & Nut Bar Cookies

This is a lower-fat, lower calorie version of an old favorite. You may use any kind of dried fruit you wish.
Ingredients:
1/2 cup packed brown sugar
1/2 cup sugar substitute
1 (8 ounce) container non-fat vanilla yogurt
1/2 cup egg substitute
2 tablespoons canola oil
2 tablespoons nonfat milk
2 teaspoons vanilla
1 1/4 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon salt
3 cups oatmeal, uncooked (old-fashioned or quick)
1/2 cup dried apricot, diced
1/2 cup dried plum, diced
1 cup walnuts
Directions:
1. In a large bowl, combine sugars, yogurt, egg substitute, oil, milk and vanilla.
2. Blend well.
3. In a medium bowl, combine flour, baking soda, cinnamon, cardamom, and salt.
4. Blend well.
5. Add to liquid mixture and mix well.
6. Stir in oats, fruit& nuts, blending well.
7. Spread dough into ungreased 9x13 pan.
8. Bake in preheated 350 degree oven for 30 minutes or until lightly browned.
9. Cool completely.
10. Cut into bars and store in a tightly covered container.
