These are one of the best cookies that I have ever tried! They are quite healthy too since oil is used instead of butter. These are also perfect for the holidays or really anytime at all.
Ingredients:
3/4 cup packed dark brown sugar
1/2 cup sugar
2 large eggs
1/2 cup oil
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1 1/4 cups whole wheat pastry flour
3/4 teaspoon baking soda
1 teaspoon fine salt
6 ounces semi-sweet chocolate chips
Directions:
1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or grease.
2. Whisk the sugar, eggs, oil, and vanilla in a bowl until smooth.
3. Whisk the flours, baking soda, and salt in another bowl. Stir the dry ingredients into the wet ingredients being careful to not overmix. Stir in the chocolate chips.
4. Scoop heaping tablespoons of the dough onto the pan and roll the dough into balls. Space the cookies at least two inches apart.
5. Bake 12 to 14 minutes (golden but still soft in center).
6. Transfer cookies with a spatula onto a plate or rack to cool. Enjoy!
