Cherylanns Macaroni And Cheese

Macaroni and cheese is done my way, with tomatoes and veggies.
Ingredients:
1 (12 oz) pkg. pasta of your choice
2 tbsp. butter
2 tbsp. olive oil
1/2 cup chopped onion
1/2 cup chopped green and/or red bell pepper
1/4 cup chopped celery
1 (14 1/2 oz.) can italian style stewed or diced tomatoes, with juice
1 lb. pkg, velveeta cheese, cut into small cubes
Directions:
1. Get a large pot of salted water to boiling. In a small skillet over medium heat, add butter and olive oil. When hot, add onion, bell pepper, and celery. Saute until crisp-tender.
2. Add can tomatoes, bring to boil and reduce heat to low and simmer 10 minutes. Then toss in velveeta cheese, stir while it is melting
3. Add pasta to boiling water and cook according to package directions until al dente. Drain pasta thoroughly. Add cheese sauce to pasta in big pot, stir well. Serve
