Cherry Tomatoes Bordelaise

The recipe is called Bordelaise because it is made from traditional flavors from that area. In this recipe the tomatoes are meant to be heated through, but not bursting.
Ingredients:
1 quart cherry tomatoes
salt & freshly ground black pepper
2 tablespoons butter
1 tablespoon shallot, minced
1 tablespoon fresh parsley, chopped
Directions:
1. Rinse and drain tomatoes.
2. Heat butter in a large skillet until hot, but do not brown. Add tomatoes, season with salt and pepper. Cook, shaking pan, to the tomatoes cook evenly without bursting. This will take about 2 minutes.
3. Add shallots and parsley and cook, still shaking pan, about 15 seconds.
