These bite-sized tomato appetizers are great for summer parties. I orignally made the dip for veggies and crackers, but it's hard to dip tomatoes without a mess. Putting the dip IN the tomatoes solved the problem and they go great together! Read more !
Ingredients:
1/2 cup cream cheese
1/4 cup sour cream
1/4 cup homemade pesto
1 quart ( 2 pints) cherry tomatoes
salt
Directions:
1. Combine cream cheese, sour cream, and pesto. Put in plastic sandwich bag and set aside.
2. Cut the tops off cherry tomatoes. Core, being careful not to cut all the way through.
3. Sprinkle tomatoes with salt, and invert to drain on paper towels (10-15 minutes).
4. With a clean paper towel, wipe out excess salt.
5. Snip corner off sandwich bag and pipe pesto mixture into tomatoes. Refrigerate until ready to serve.
