1 medium cucumber, peeled, seeded, and thinly sliced
1/4 cup thinly sliced sweet onion
1/4 cup chopped fresh parsley
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon pepper
Directions:
