Cherry pie filling sandwiched between delicate, buttery cake topped with crumbs and sliced almonds. Sure to impress family or friends. Got this out of a calendar that feature products such as Robin Hood and Carnation.
Ingredients:
2 1/4 cups all purpose flour
3/4 cup sugar
2/3 cup butter, softened
1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup evaporated milk ( not condensed milk)
1 tbsp lemon juice
1 egg
1 tsp almond extract
1 can ( 19 oz/540 ml) cherry pie filling ( e.d. smith is good)
1/2 cup sliced almonds
Directions:
1. Combine flour and sugar in large bowl.
2. Cut in butter til mixture is crumbly. Set aside 1/2 cup of the crumbs
3. Add baking powder and soda to remaining flour mixture.
4. Combine evaporated milk and lemon juice. Stir well and leave 5 min until thickened. To this add egg and extract and beat well.
5. Add to dry ingredients and stir until just moistened.
6. Spread 2/3 of batter over bottom and about 1 inch up the side of a 9 greased springform pan to form a shell.
7. Spread pie filling in shell.
8. Drop small spoonfuls of remaining batter over pie filling.
9. Stir almonds into reserved crumb mixture and sprinkle evenly over cake.
10. Bake at 350F/180C for 50 - 55 minutes.
11. *May sub 2 1/4 cps Robin Hood all purpose Wheat and Oat Flour OR 2 1/2 cups cake and pastry flour.
12. **My sub with different pie fillings i.e. blueberry (omit almond extract, add lemon zest) or apple ( add some cinnamon) peach, etc
13. Use your imagination for different flavor combinations. Use different nuts too. Apple goes so well with pecan also. Have fun. Be creative. I seldom follow a recipe exactly.
