This salsa works very well with halibut, salmon, and most any other type of fish.
Ingredients:
3 cups sweet, pitted cherries
1/4 cup finely diced red bell pepper
1/4 cup finely diced yellow bell pepper
12 cup finely diced red onion
2 tablespoons honey
2 tablespoons lime juice
1 clove minced garlic
1 serrano chili, seeded and minced
1 teaspoon grated lime zest
pinch of salt
Directions:
1. Chop 2 3/4 cups of the cherries. Place the remaining 1/4 cup cherries in a blender with 1/4 cup water and puree. In a large bowl, mix the puree with remaining ingredients. Cover and refrigerate for 20-30 minutes, to allow flavors to combine.
