A very old recipe. the cake is dotted with bursts of red cherries clinging to each piece. Prefect for the cherry lover. Quick well loved at work.
Ingredients:
1 cup butter butter
3 oz boiling water
3 oz milk
3 eggs
3 cups of cake flour
1/2 nutmeg
2 tsp of baking powder
1 cup of glace cherries sliced and dredged in flour
1 cup of unsweetened coconut
1/2 tsp of almond flavoring, optional
Directions:
1. Grease two 8x4 loaf pans and line with parchment. Or use bundt pan. Preheat oven to 300 degrees.
2. Cream butter and gradually add sugar, beating until light and fluffy. Sir in boiling water until well blend then add milk repeating the step.
3. Add 1/3 of the flour then one egg. Beating well after each addition. Repeat twice more, adding nutmeg and baking powder to last flour addition.
4. Fold in coconut and cherries.
5. Carefully spread into pans of your choice. Baking 300 degrees for about 75 to 80 minutes.
