Cherry limeade Chicken Salad

This extremely hot summer weather sure makes no-cook meals a plus - especially ones that make good use of the in-season fresh fruits and veggies.
Ingredients:
2 boneless, skinless chicken breasts, cooked and cubed
1/4 cup mayonnaise
1/4 tsp curry powder
1 medium granny smith apple, diced (peel on or off - your choice)
about 25 sweet cherries, pitted and halved
1/4 cup dried cranberries
juice of half a fresh lime
salt to taste
Directions:
1. Mix mayo and curry until well blended.
2. Add cubed chicken, diced apple, halved cherries, and dried cranberries to mixing bowl. Squeeze lime juice over and mix to combine. Fold in dressing.
3. Chill and serve topped with toasted almonds for a salad - or as a sandwich as I did - on wheat french bread with a romaine lettuce leaf.
