this is a recipe that came out of my second cookbook.. I got this in high school for entering in a ' make your kitchen over' school contest.. the poor little cookbook is starting to fall apart.. the name of it is Recipes from Famous Kitchens. Ingredients:
1 1/3 sups sifted flour
1 cup sugar
1/3 cup cocoa
1 teasp. baking soda
3/4 teasp. salt
1/2 cup soft shortening
1 egg
1/2 cup pet evaporated milk
1/4 cup water
2 tbsp. maraschino cherry syrup
1/2 cup maraschino cherries..... cut-up
Directions:
1. Preheat oven to 350' F.
2. grease bottom of an 8-inch square pan.
3. sift flour, sugar, cocoa, baking soda, and the salt into a 3-quart bowl
4. add shortening, egg, and the evaportated milk to dry mixture
5. beat 3 minutes with electric beater at medium speed
6. scraping the sides of bowl often
7. add water and cherry syrup and beat hard for 1 minute.
8. stir in cut-up cherries
9. pour into prepared pan
10. bake at 350' on the center rack for 50 - 55 minutes or until cake pulls from sides of the pan
11. remove from oven. let stand 10 minutes before turning out to cool
12. Frost with your choice of frosting.
