Cherry Cream Cheese Griddlecakes

Ingredients:
2 cups milk
4 ounces cream cheese, softened
2 tablespoons butter, melted
1 teaspoon vanilla
1 egg, beaten
3 cups flour
1/4 cup sugar
1 cup frozen dark sweet cherries, thawed, chopped
confectioners' sugar, for topping
Directions:
1. In a large mixing bowl, combine milk and cream cheese; blend well.
2. Add melted butter, vanilla and beaten egg; blend well.
3. Add flour and sugar; mix well.
4. Fold in chopped cherries.
5. Pour about 1/4 cup of batter on a hot, greased griddle or frying pan.
6. Flip when bubbles form around edges.
7. Fry the other side until lightly browned.
8. Sprinkle with confectioners' sugar.
