Cherry Coconut Bars

Ingredients:
1/2 cup king arthur unbleached all-purpose flour
1/4 cup butter, softened
4-1/2 teaspoons confectioners' sugar
filling:
1 egg, lightly beaten
1/2 cup sugar
2 tablespoons king arthur unbleached all-purpose flour
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons chopped almonds
1/4 cup flaked coconut
1/4 cup maraschino cherries, quartered
Directions:
1. In a small bowl, combine the flour, butter and confectioners' sugar until smooth. Press into a 9-in. x 5-in. loaf pan coated with cooking spray. Bake at 350° for 20-25 minutes or until set.
2. For filling, in a small bowl, combine the egg, sugar, flour, vanilla, baking powder and salt. Stir in the almonds, coconut and cherries. Spread over crust.
3. Bake for 20-25 minutes or until golden brown. Cool for 15 minutes on a wire rack. Cut into squares while still warm. Yield: 8 bars.
