Here's another recipe from the Oregon Fruit Products Co, & the original recipe calls for a can of Oregon Royal Ann Cherries. Preparation time does not include the time needed for the gelatin mixture to chil until set.
Ingredients:
1 (15 ounce) can cherries, drained, syrup reserved
1 (6 ounce) package cherry gelatin
2 cups boiling water
1 cup cold water
2 cups chicken, cooked, diced
1 cup celery, diced
1 1/2 cups mayonnaise
1/4 cup low-fat sour cream
2 tablespoons fresh lemon juice
1 dash salt
Directions:
1. Dissolve gelatin in 2 cups of boiling water.
2. Add enough cold water to the cherry syrup to make 1 cup, then add this syrup mixture to the gelatin mixture.
3. Pour into an 8-inch ring mold & chill until set.
4. In a bowl, combine mayonnaise, sour cream, lemon juice & salt, then add the cherries, chicken & celery, stirring to combine thoroughly.
5. To serve, un-mold the gelatin & heap the chicken salad in the center of the ring of gelatin.
