A light dessert, just right after a big Easter dinner. You need to start two days before you want to serve it, but it doesn't take very long.
Ingredients:
6 egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 3/4 cups sugar
2 (3 ounce) packages cream cheese
1 cup sugar
1 teaspoon vanilla
2 cups whipped cream (1 carton)
2 cups mini marshmallows
1 can cherry pie filling
2 cups fresh strawberries
Directions:
1. Beat egg whites until frothy, slowly add sugar, cream of tarter and salt.
2. Pour in greased 9 x 13 pan.
3. Bake 60 minutes at 275 degrees.
4. Turn off oven and leave in oven overnight.
5. Do not peek.
6. The next morning make this: Blend the cream cheese, sugar and vanilla.
7. Fold in whipped cream and marshmallows.
8. Spread on baked meringue.
9. Refrigerate 12 hours or overnight.
10. Top with cherry pie filling and strawberries.
