Homemade jam is a luxurious splurge for morning toast or plain yogurt. Minimal sugar is added to this recipe, so the flavor of the fruit shines. Use a bit of this jam to sweeten marinades for grilled pork or chicken. This recipe yields enough jam to keep some and share some with friends. It should stay fresh for up to three weeks in the refrigerator.
Ingredients:
2 cups pitted fresh cherries (about 12 ounces)
1 1/2 cups blackberries
1 1/2 cups raspberries
3/4 cup sugar
1 1/2 teaspoons fresh lemon juice
Directions:
1. Combine all ingredients in a medium, heavy saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer until reduced to 2 cups (about 1 1/2 hours), stirring occasionally. Spoon into a bowl. Cover and chill.
