Ingredients:
1 (10-ounce) jar maraschino cherries
1/3 cup butter or margarine, softened
2/3 cup firmly packed brown sugar
2 eggs
1-3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup mashed ripe bananas
1/2 cup chopped macadamia nuts
method
Directions:
1. Pour the jar of Maraschino Cherries into a collender to remove the liquid.
2. Reserve 2 tablespoons of juice.
3. Cut each cherry into slices; set aside.
4. In a bowl add the butter, sugar, eggs and the 2 tablespoons of maraschino juice.
5. Mix together till well mixed. In another bowl combine the flour, baking powder and salt. Using a whisk stir the dry ingredients till mixed.
6. Add the 1/3 of the flour and 1/3 of the mashed banana.
7. Continue to do that till all the flour and banana is gone.
8. Mix in the cherries and the nuts.
9. Do not over mix. Lightly grease a large loaf pan and pour the batter into the pan.
10. Bake in a preheated 350F. oven for 1 hour.
11. Remove from oven and set on a wire rack to cool.
