One our favorite desserts. In the summer, I use fresh strawberries, peaches, and bluberries for the topping. This is heavenly, divine, scrumptious, smooth, creamy, cloud-like, etc. etc. etc. :)
Ingredients:
2 sticks unsalted pure butter, softened
2 cups all-purpose flour
1 cup chopped, pecans (medium chop, i like to chop them)
1 8-ounce package cream cheese
1 pound box powdered sugar
8 ounces whipping cream, whipped ( okay, could use cool whip)
1 or 2 cans cherry pie filling or make your own from canned cherries or
use fresh strawberries when available* (see note in directions)
note: may add almond flavoring to the cream cheese, powdered sugar when beating, or to the fruit
Directions:
1. In a medium bowl, mix the butter and flour as in pastry
2. Add chopped pecans to this mixture
3. Press the above in a 9 X 13 dish or pan
4. Bake at 350 degrees for about 20-30 minutes until lightly browned
5. Let cool
6. In a large bowl, using an electric mixer, mix cream cheese and powdered sugar, slowly
7. Fold in whipped cream or (okay, Cool Whip)
8. Spread on top of cooled crust
9. At this time you may spread the cherry pie filling over all OR
10. you may refrigerate and *spread when ready to serve*
11. *NOTE: When I use *fresh* strawberries, peaches, blueberries, etc.
12. I cut the dessert into squares and drizzle the sweetened fruit over the square. For a strawberry, peach melba , I drizzle the square with sweetened strawberries, then drizzle peaches over the strawberries! Now this is good, good!
13. ENJOY
