Cheri's Tortilla Soup

Everyday Tortilla Soup! This soup is requested on a weekly. It is easy, delicious and healthy. I hope your family enjoys it as much as mine does.
Ingredients:
1 large chicken breast, roasted
4 -5 small zucchini
1 bunch green onion
2 (15 1/4 ounce) cans whole kernel corn
2 (10 ounce) cans rotel tomatoes
garlic, crushed, as much as you like
3 (32 ounce) boxes chicken broth
1 bunch cilantro
1 tablespoon canola oil
1 shake dried chipotle powder (it's hot, use your discretion)
Directions:
1. Slice Zuchhini's into coins or quarters, depends on size of zucchini.
2. Slice Green Onion's.
3. 1 Tbl Canola Oil.
4. Add to Pot and Saute.
5. Add Garlic.
6. Add Chipotle Chili Powder.
7. Stir and Warm Garlic through.
8. Add Broth & Chicken.
9. Simmer for about 30 minutes.
10. Turn off heat and add chopped cilantro.
11. If you so desire, add tortilla chips, some pepper jack cheese and a few slices of avocado to the bowl prior to adding the soup.
12. Enjoy!
