Makes a lot so you might want to halve it.
Ingredients:
7 tomatoes,cut in 1/4 dice
1 large red onion,cut in 1/4 dice
2 c fresh chopped cilantro
2 jalapeno peppers,seeded and minced
2 tbs salt
1 tbs gr. black pepper
1 tbs minced garlic
2 tbs lime juice
1/2 c distilled white vinegar
1/2 c vegetable oil (i halve this)
Directions:
1. Place tomatoes,red onion,cilantro, jalapeno peppers,salt,black pepper,garlic,and lime juice into large mixing bowl. Pour in the vinegar and vegetable oil and gently mix to combine. Cover and refrigerate 1 hour before serving.
