My grandma always had these on hand when we were kids growing up. I just loved the cool, crisp and tangy treat in the Summer and hope you will too. I just made a batch last night and thought I'd share the recipe with you. This simple, raw side dish is unlike other cucumber salad recipes that use sour cream. Note that although this take only 5 minutes to prepare and there is no cooking, it needs to sit for an hour in the fridge for the flavors to blend and mellow.
Ingredients:
1 english cucumbers or 1 regular cucumber, peeled
1 onion, thinly sliced
2/3 cup cider vinegar
1 1/3 cups water
2 teaspoons sugar
1 pinch salt
Directions:
1. Combine vinegar, water, sugar and salt and pour over sliced cucumbers and onions. A sealed quart jar works well for this.
2. Allow to sit for one hour in refrigerator so it mellows a bit.
3. Lasts for up to a week.
