Cheezy Potato Cakes

Looks nice in a plate, especially when you are having company and want to do something different with potatoes.
Ingredients:
550 grams boiled, mashed potatoes (1 pound)
130 grams flour (5 oz)
6 tablespoons melted butter
1 teaspoon salt
8 oz cheese (230 grams)
4 well beaten eggs
Directions:
1. Mash the potatoes while still warm and add butter and salt.
2. Add in enough flour to make it a pliable dough, without making it too dry.
3. The type of potato will effect this.
4. Add cheese and two well beaten eggs.
5. Mix well.
6. Make into small round cakes.
7. Dip in breadcrumbs or flour.
8. Fry until golden brown on each side.
9. You can add finely chopped mushrooms or bacon in mixture.
