Ingredients:
1/4 cup diced red bell pepper
1/2 cup broccoli florets
2 tablespoons diced onion
1 tablespoon olive oil
1/4 cup nonfat ricotta cheese
2 tablespoons shredded italian 4 cheese blend
2 oz (1/4 cup) cooked penne pasta
Directions:
1. Saute pepper, broccoli, & onion while cooking pasta
2. Combine ricotta & shredded cheeses with vegetables then toss with cooked pasta to combine all.
