Cheesy Tuna Rice Muffins

Loved these growing up- the only way I would consent to eat tuna.
Ingredients:
2 c cooked rice
1 c cheddar cheese, shredded
6 1/2 oz tuna, drained
3 oz sliced olives
1 tbsp parsley flakes
1 tsp seasoned salt
1 egg, beaten
2 tbsp milk
3 tbsp margarine , melted
2 tbsp lemon juice
Directions:
1. combine rice, cheese, tuna, olives, parsley, and salt.
2. Stir in egg and milk.
3. Grease 6-12 muffin cups. Divide rice mixture evenly.
4. Bake in 375 oven 15 minutes or lightly browned. drizzle with butter sauce.
5. Butter Sauce: Combine melted margarine and lemon juice.
