Cheesy Rice With Fresh Spinach And Mushrooms

Something I came up with to use my fresh spinach and mushrooms I had on hand. I made it for two, but you can double or triple it to suit your needs.
Ingredients:
1 1/2 cups water and 3/4 cups rice - salted/cooked accordingly
1 tbls. butter/1tbls. olive oil
2 tbls. chopped green onions (i had three)
1 tsp. minced garlic
1 cup chopped mushrooms (approximately)
1 cup torn fresh spinach (approximately)
1 tsp dried basil (even better with fresh basil, if you have it)
1 cup shredded mozzarella (or any other cheese)
Directions:
1. Cook rice (or leftover rice works great)
2. Meanwhile add butter and/or olive oil to pan over med - med/low heat
3. Saute onion, garlic
4. Add mushrooms and let cook down without stirring (about 5 mins. or so)
5. Add spinach and stir till cooked down
6. Add basil, salt and pepper to taste
7. Add cooked rice and 1/2 cup of cheese to spinach/mushroom mixture and combine
8. Put in small casserole and top with remaining cheese
9. Bake in 350 oven till bubbly (it's already cooked and hot, so however long you like)
