Cheesy Rice & Broccoli Casserole

A Sunday dinner, special occasion favorite to accompany chicken or pork main entree.
Ingredients:
1 (16 ounce) bag broccoli florets, thawed
3/4 cup celery, chopped
1 (8 ounce) can sliced water chestnuts, chopped in quarters
2 (10 3/4 ounce) cans cream of celery soup
1/2 cup butter, melted
1 (8 ounce) jar cheese whiz
2 cups instant rice, uncooked
Directions:
1. Mix all ingredients together. Put in greased 13x9 inch casserole dish. Bake at 325 F for 1 hour.
2. Heart healthy substitutions: Use Healthy Request Campbell's Cream of Celery soup, Smart Balance margarine (or other similar product), omit Cheese Whiz and use 2 c fat free shredded cheddar cheese, instant brown rice.
