Cheesy Potatoes With Corned Beef

Another recipe from DH's college days. Easy, inexpensive, filling. First sauté a bit of chopped onion until limp before the potatoes go in for variety.
Ingredients:
4 big potatoes (leftover baked)
8 ounces cheese
1 (12 ounce) can corned beef
Directions:
1. Microwave potatoes if they aren't already baked.
2. Chop potatoes and fry a bit over medium heat.
3. Crumble the canned corned beef over the potatoes.
4. Slice the cheese and arrange artistically over the potatoes and corned beef.
5. Cover and let sit until the cheese is melted and everything is hot through.
