Cheesy Potato Soup

Just a good winter comfort food
Ingredients:
10 potatoes
1 cups white or yellow onion chopped
1 cup red onion chopped
1 cup green onion chopped save the tops
1 cup celery chopped
2 tbs garlic diced
2-3 cups chicken broth
1 1/2-2 cups cream
2 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1 8oz pkg cream cheese
16 oz bacon
1tsp corn starch
1 cup shredded parmesan cheese (to top soup)
1 cup chopped chives or the saved green onion tops
salt and pepper for your taste
Directions:
1. Peel 10 potatoes and cube
2. Boil add salt and pepper to water, boil till almost tender. (Do NOT over cook, potatoes will cook more later)
3. Take potatoes out and book bacon in the pot and cook till crispy. (Remove to drain and cool for topping later)
4. Add next 6 ingredients to pot and mix well
5. 1 cup onion
6. 1cup celery
7. 1 cup red onion
8. 1 cup green onion
9. 2 TBS garlic
10. Salt and pepper to taste
11. Add potatoes back
12. Add 2-3 cups chicken broth
13. Add enough cream to cover potatoes
14. Simmer about 10 min.
15. Add 2 cups shredded cheddar cheese
16. Add 2 cups shredded mozzarella cheese
17. Add 1 8oz pkg. of cream cheese
18. After cheese has melted you can thicken with 1/2 cup milk and 1 tsp corn starch.
19. Ladle up the soup add crumbled bacon and parmesan cheese and chives. Serve hot with some crusty bread and enjoy.
