Cheesy Pasta Bake

Didn't have much in the house, and wanted something with pasta, so I invented this. My 15 month old loved it, as did my husband! I made this with rotini as that was all I had on hand, you can use whatever pasta you prefer. You can also add more tomatoes if you like more of a chunky sauce. This could also be made with a Jar of spaghetti sauce, or whatever your favorite sauce is. Can also add in ground beef.
Ingredients:
2 roma tomatoes, diced
1/4 onion, chopped
3 garlic cloves, chopped
1 (16 ounce) can tomato sauce
1 1/2 teaspoons oregano
1/2 teaspoon basil
1/4 teaspoon thyme
1 (16 ounce) bag rotini noodles
4 tablespoons parmesan cheese, grated
1/4 cup water
1 -2 cup shredded cheddar cheese (or whatever cheese you prefer or have on hand)
Directions:
1. Chop up the tomatoes, onion and garlic, put them in a small sauce pan and saute until onion and garlic are translucent. Add in the Tomato sauce, as it starts to boil use a potato masher and mash up the tomato's a little more. Add the remaining sauce ingredients, and allow sauce to simmer for about 15 minutes. This can be done ahead of time.
2. Cook the Noodles according the directions on the package. Once done drain and put them back in the pot.
3. Pour the sauce onto the noodles and stir. Then add in the Parmesan Cheese and combine.
4. Preheat the oven to 350 Degrees.
5. Pour the mixture into a slightly greased 8x8 Pan. Pour 1/4 cup water down over the noodles. Top with the Cheddar Cheese, and cook for about 15-20 minutes or until cheese is melted and bubbly.
6. Let it cool a minute before serving.
