This is from America's Test Kitchen and while we don't make it the same twice in a row it is nice to have a base recipe to use our Mexican food leftovers
Ingredients:
2 teaspoons oil
1/2 lb ground beef
1 onion, minced
8 ounces tortilla chips
1 garlic clove, minced
4 cups cheddar cheese, shredded
1 tablespoon chili powder
2 scallions, sliced thinly
1/2 teaspoon cumin
1 cup guacamole
1/4 teaspoon dried oregano
1 cup salsa
1/4 teaspoon cayenne
1 cup sour cream
1/8 teaspoon salt
Directions:
1. Heat the oil in a medium skillet over medium heat until shimmering. Add the onion and cook until softened. Add the garlic, spices, and salt. Cook until fragrant. Add the ground beef and cook until done.
2. Heat oven to 400°, spread half of the chips in an even layer in a 9x13 baking dish. Sprinkle half of the beef mixture evenly over the chips and then sprinkle with 2 cups of the cheese. Repeat with the remaining chips, beef mixture, and cheese. Bake until the cheese is melted, about 9 minutes. Sprinkle with scallions and serve with guacamole, Salsa and sour cream.
