Cheesy Meatloaf

This comforting meatloaf is filled with cheese. Recipe is from At Home Cafe, by Helen Puckett DeFrance.
Ingredients:
1 1/2 lbs lean ground beef
3 eggs
3/4 cup salsa
3/4 cup dry breadcrumbs
1/2 cup celery, finely chopped
1/4 cup onion, finely chopped
2 teaspoons garlic, minced
2 teaspoons dry creole seasoning
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon dried parsley
1/4 teaspoon black pepper
1/2 lb mozzarella cheese, sliced
Directions:
1. Heat oven to 350 degrees.
2. In large bowl, gently mix all ingredients except cheese.
3. Transfer half of meat mixture to 9x5-inch loaf pan.
4. Top with cheese; cover with remaining meat mixture.
5. Bake 60-70 minutes until meat thermometer inserted into center of loaf registers 170 degrees F.
6. Let meatloaf rest in pan 20 minutes before serving.
