Cheesy Egg Casserole

This is a fabulous breakfast or brunch idea! This feeds from 12-16 people, but you can cut it down just fine. This will become one of your favorite go-tos as soon as you taste this! It's definately a keeper! This is great served with a side of your favorite salsa. Source: Nicole/Baking Bites
Ingredients:
12 large eggs
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups milk (any kind)
16 ounces cottage cheese, small curd
8 ounces cream cheese, cut into 1/2-inch cubes
1/3-1/2 lb shredded monterey jack cheese
Directions:
1. Preheat oven to 350°F
2. Lightly grease a 9×13-inch baking/casserole dish.
3. In a large bowl, or the bowl of a stand mixer, beat together eggs, flour, baking powder, salt and milk. Stir in cottage cheese, cream cheese and shredded Monterey jack cheese.
4. Pour into prepared baking dish.
5. Bake for about 45 minutes, until eggs are set and casserole is not “wet” in the middle.
6. Dish will deflate slightly as it cools.
7. Cool for at least 10 minutes before serving to make slicing easier.
