Cheesy Corn on Rye (21 Day Wonder Diet : Day 2 )

This is Day 2: Breakfast, on the 21 Day Wonder diet. I was unable to buy Rye bread the first time I made this, so i used Light Rye instead. This breakfast is to be followed by a mid-morning snack of 1 banana.
Ingredients:
310 g corn kernels, drained
2 tablespoons low-fat ricotta cheese
40 g baby spinach leaves
2 slices rye bread, toasted on 1 side only
Directions:
1. Heat corn in medium bowl in microwave on HIGH for about 30 seconds; stir in cheese and spinach.
2. Serve toast (toasted side down) topped with corn mixture.
