Cheesy Chicken With Chilies

Cheesy Chicken with Chilies
Ingredients:
2 tablespoons vegetable oil
6 chicken cutlets
3 tablespoons all-purpose flour
1 (10 ounce) can enchilada sauce
1 (11 ounce) can corn
1 (4 ounce) can diced green chilies
3/4 cup shredded cheddar cheese
Directions:
1. Heat oil in a large skillet.
2. Coat chicken cutlets with flour.
3. Add chicken to skillet and cook until golden.
4. Remove to paper towels to drain.
5. Wipe out skillet.
6. Add enchilada sauce and corn and bring to a boil.
7. Drain and coarsely chop chilies.
8. Arrange cutlets on sauce.
9. Top with green chilies and cheese.
10. Cover, reduce heat and simmer 1 to 2 minutes until cheese melts.
11. Slice scallions and sprinkle over top.
