Cheesy Chicken Pot Pie

Just threw this together and my family loves it.
Ingredients:
2 extra large pillsbury pet ritz pie crusts (9 5/8 inch pans)
3 tablespoons olive oil
3 chicken breasts
2 (10 1/2 ounce) cans turkey or 2 (10 1/2 ounce) cans chicken gravy
2/3 cup sour cream
8 ounces shredded cheddar cheese
1 cup water
Directions:
1. Thaw pie crusts.
2. Heat olive oil in a large skillet.
3. Cook chicken in oiled skillet, 10 minutes per side.
4. Cube chicken.
5. Set aside 1/2 cup of shredded cheese.
6. Mix all ingredients (less the 1/2 cup cheese) in a large mixing bowl.
7. Evenly scoop mixture into pie crusts.
8. Top pies with 1/4 cup shredded cheese each.
9. Bake in 450 degree oven for 30 minutes.
