Cheesy Black Bean Casserole

This is a yummy vegetarian casserole that even my Texan meat-eating husband enjoyed.
Ingredients:
cooking spray
3 cups cooked brown rice
2 (14.5 ounce) cans black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chile peppers, drained
2 cups ricotta cheese
1 (8 ounce) package shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 tablespoon parsley
1 teaspoon ground black pepper
1 slice tomato (optional)
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
2. Mix cooked brown rice, black beans, diced tomatoes with green chile peppers, ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, and black pepper in prepared dish.
3. Bake in preheated oven until cheese is bubbling, about 30 minutes. Garnish with tomato slice.
