I made this cake for a birthday and it has been a great success. Very easy- I only baked the crusty bottom but not the filling. You can use all variety of fruits except kiwi and pineapple because the Gelatin will not work with those ones. The size of the tin depends on you, I used a smaller but deeper one to make it higher... good luck and enjoy!
Ingredients:
200 g biscuits (buttered or digestive)
110 g butter
2 tablespoons brown sugar
550 g cream cheese (philadelphia, st moritz or the cheaper brands)
220 g sour cream
150 g fine sugar
2 eggs
1 lemon
8 -10 g vanilla sugar
15 leaves gelatin, . (cca 2 envelopes, the more fruit you use the more gelatin you need.)
400 g strawberries (or any fruits or mixed)
Directions:
1. Break the biscuit into crumbs. Mix with melted butter, add sugar. Press into bottom of your cake dish.
2. Bake at 300 degrees for 5-10 minutes, depending on your oven. Let it cool.
3. Mix cream cheese with sour cream.
4. In 2 separate bowls mix half of sugar with the egg whites till its fluffy and other half of sugar with egg yolks.
5. Add egg mixtures to the cream mixture.
6. Squeeze in the juice of your lemon and add its grated peel.
7. Add vanilla. Mix all well.
8. Put the gelatin leaves in cold water for about 5 minutes. Then slowly heat it up, do not boil, till melts and stir it well.
9. One minute later pour half of the gelatin into the cake mixture and mix well. Keep the other half.
10. Take your cake base that cooled down already and poor half of the cake mixture on it. As next layer, put half of your strawberries that are cut up in fours. Brush them with the gelatin.
11. Pour in the rest of the cake mixture.
12. Decorate with the strawberries the way you want. Brush them with the rest of the gelatin.
