A very simple, filling lunch or snack.
Ingredients:
3 -4 broccoli florets, steamed & chopped
1 plum tomato, de-seeded & chopped
1 cup white mushroom, chopped
100 g cheddar cheese, shredded
225 g self rising flour
175 ml skim milk
55 ml extra virgin olive oil
1/4 cup egg substitute
Directions:
1. Mix vegetables & cheese together.
2. Add remaining ingredients.
3. Spoon mixture into greased muffin tins.
4. Bake at 400 degrees for 20 minutes.
5. Let sit 5 minutes and serve.
